Brie en croute, plus a lot of those weirdly-colored foods like blue cornbread and white-bean chicken chili that were underground in the 80s and went mainstream in the 90s.

Would "Cajun-spiced" anything count? I was in my twenties in the 1990s, and it seemed that blackened (insert whatever protein here) was in demand. I mean no disrespect to cooks from Louisiana; blackening is a method of cooking something, while the combination of seasonings used to do so is another.

When I first saw this post, I had the same initial thought and then I read through the comments and realized that wasn't the case for me. I think this is a really fun thread and I love so many of the suggestions.

I don't think anyone necessarily means that 90's themed food is stuff that isn't eaten today. Just that they were introduced or became very popular in the 90's.
