I actually marinate and then bake watermelon to simulate salmon for poke bowls (I'm vegan, so that's as close as I get---and it does mimic the texture and appearance of salmon after baking).
After watching the video, I think it would be fun to try it at least once, as long as there were enough people to split the cost with.
I love watermelon and I've tried different recipes with it (feta salad, drizzled with balsamic, etc.), but I really do just prefer it plain and cold (or with salt sometimes).

I don't have a grill, but I see a lot of cooks/chefs grilling all kinds of fruit. I think the goal is to just leave it on long enough to get some grill marks/grilled flavor, caramelization.

It's not mushy. It's sweet and the outside is crispy. There are recipes all over the internet for grilled watermelon and grilled watermelon salad. It's nothing new. The presentation of that watermelon is wat's drawing attention.
I would try it too. I also have grilled watermelon. I think I have probably grilled every fruit I like. Grilled pineapple is my favorite.
Grilled pineapple is delicious! Sometimes I alternate it with watermelon on a skewer, as in the recipe I posted.
