I mistakenly bought a new pint of cream because I thought the quart of cream I already had in the fridge had passed the expiration date. But it appears the expiration date is at the end of the month. Meantime, I now have a new cream carton that doesn't expire until October.

There's still a good bit of cream left in the old carton, so I guess some butter making is in the future today. The cream I have left will probably make about 1/4 to 1/2 pound of butter. I know I won't be using any cream for the rest of this month, so I'd rather do that than throw it out.

Anyone else make butter before their cream goes past the expiration date?

Not for years and years and my mother-in-law at the time was furious because she wanted to use it for half and half.

I use heavy cream in my coffee and love it

I shook cream in a mason jar til its butter when I was a kid

Plan some meals to use it up. Cream never goes bad in our house and we don't make butter. My wife did as a kid in 4H, but not anymore.

I've made butter and whipped cream. I use an electric whisk. Whipped cream is delicious with berries such as strawberries. There is no comparison to the crap they sell in supermarkets.

As for the cream going past the expiration, as long as it don't smell bad it should still be good?

Well, I have the newer carton and I'll need to use that, and I don't use cream all that often. I have too much food I need to eat now before all of it goes bad and I won't be making anything with cream until after that. I'd rather do the butter, honestly. I love homemade butter and I can always put it in the freezer. If I had a choice, I'd make all my butter instead of buying it, but it's pretty expensive. With the cost of the cream, it ends up being almost $8 a pound. For that I could just buy Kerry Gold butter (which is also pretty good, I'll admit). The problem with homemade butter is I sit and eat it just as it is.

Make some spaghetti in garlic cream sauce - or fettuccine alfredo, or cream of mushroom, enchiladas suizas, so many ways to use cream aside from making butter. The last time I made butter from cream it got rancid in less than a week.

It wouldn't last that long around here. I'm like RodentRaiser. When I made butter as a kid with 4H, we used mini churns with gears and whisks in canning jars at a fair and were supposed to give out samples on saltines. The leaders had to stand over us kids so we didn't eat all the samples!

I'm With the group that says cool with it or make whipped cream.

I also believe that sometimes it makes sense to just give it up and throw stuff away.
