I have very painfully learned that pretty much regardless of how good/expensive the restaurant, crabcakes very far out of Maryland are HORRIBLE!
Stringy, nasty, skimpy, full of filler. Where are the sweet lumps of succulent crab? I end up disappointed every time and usually after paying a premium price - I just refuse to do it any more.
We have them here in the land (Oregon) of Dungeness crab, but I prefer my crab meat unadulterated. Restaurants serve them here and they range the gamut in flavor and quality.
In Newfoundland the prisoners were served so much lobster they rioted.
The problem with locally sources seafood is you get used to the quality. As part of Marylands' culture, it's popular for a reason. When I left Vancouver, BC the home of FRESH FRESH seafood of all kinds, I don't even want it in my house any more. By the time I get either frozen or seafood even in the deli it's just not the same.
I live in Missouri. There area few restaurants that offer them locally. Of course, they are premade and pre frozen, etc. To my knowledge I have never had fresh ones. At times I even doubt that they are made with "real" crab, since some restaurants use "Sirimi" crab which is basically ground up fish with food coloring.
They aren't popular here in northeastern Pennsylvania - because they aren't made the way they are on The Bay.
There is a restaurant in Cape May NJ that makes a pretty good cake - the Harbor View.
I used to live in MD and like crab in most of its various incarnations except for soft shell crabs. Egads whoever thought that was a good idea? Give me a basket of hard shells and I'll forgive you anything.
On the coast of Oregon, where there is plentiful and excellent crab, crab cakes aren't very popular. People prefer to eat crab in a different form. Some of the restaurants serve them, but I suspect that the restaurants that serve them are serving the frozen ones. I've never heard anyone raving about the great crab cakes they ate. A good fish restaurant is much more likely to have crab bisque than to have crab cakes.
Crab Louis, crab Foo Yong, but mostly steamed crab with melted butter, a bit of crab topping halibut, is much more likely to be how crab is eaten on the west coast. I make a good crab enchilada and have zero interest in making crab cakes.
Crab Louis is the most famous dish of fisherman's wharf in San francisco.
