I made a sheet cake sized pan of pumpkin bars with butter cream frosting a while ago when I discovered a large can of pumpkin in my pantry shelves. Thanks to that pantry thread we had. Then I split it three ways and shared two thirds of it with people who had been gifting me fresh veggies. I sprinkled some chopped walnuts over the top.

DH said they were very good. That was probably because I've tossed my old spices and gotten new.

And last night Bachelor Son was here and asked what was in the refrigerator so he got the last of them. He seemed happy to have them.

I don't like pumpkin anything when it comes to baking. For me that squash taste just comes through and screams "vegetable." It's hard for me to understand the attraction.

But the neighbor who abandoned his monster zucchini on my back steps will soon be leaving a couple of pumpkins and I will be glad to have them for fall decoration.

Cream cheese frosting makes cardboard edible.

I only just saw the pumpkin rolls this year. They certainly looked enticing. I make a mean jelly roll now and then and could probably be convinced to try to produce a pumpkin roll.

The family wants plain old pumpkin pie at Thanksgiving but I've been cheating trying to find something that's tasty to me too. There are only four of us anymore so I don't care to make a whole other pie for myself. I've tried pumpkin tarts with cranberries and nuts and pumpkin cheesecake with gingersnap crust and a maple glaze. It's no use. They still want pumpkin pie and I can still taste the squash taste.

If I have to eat a sliver at least I do have a good recipe for the pie. It uses sweetened condensed milk instead of whatever and it's rich and creamy. Betty Crocker.

Oops! I see I've wandered off subject. Please excuse.

Thanks for that.

I love pumpkin bread, muffins, cheesecake, pancakes and chili. I don't care for pumpkin pie, ice cream or pumpkin coffee drinks.
