I was surprised that New Jersey wasn't the Taylor ham, cheese, and egg on a hard roll. That's the "Jersey breakfast".
However, I happened to see the rerun of the Anthony Bourdain episode where he was at the shore and in Camden just last night, and he had an Italian sub. In this article, they pick the "Italian hoagie" as the NJ sandwich, and I bet they got the idea from that show. The fact that they call it a hoagie and not a sub is a dead giveaway that their resource is South Jersey.
Subs are good, but a Taylor ham sandwich says NJ.

Only after leaving NY in 1990, and later visiting our kids in NJ, did we discover this NJ sandwich. Delicious!
Taylor ham says North Jersey. They sell the same stuff as Case Pork Roll in South Jersey. I knew one person whose mother would get the Case stuff occasionally, but that was it.

Ohio - seen the polish sausage in Cleveland but it is hardly widespread. You could make a much stronger argument for the chili dog which you can find at the various chili parlors in Cincinnati or Tony Packo's in Toledo.
Virginia - country ham is a favorite but it is almost always served on a biscuit as opposed to a bun.
I understand why they went with the green chile cheeseburger for New Mexico, but they could've easily picked the Albuquerque turkey sandwich. It's usually made with turkey, green chile, cheese, avocado and bacon. It's really the only sandwich unique to New Mexico, apart from a burger.
