Our local place serves up a few things I absolutely love and crave. One is their tableside guacamole, another is a dish with chicken in a cream sauce with pieces of bacon, and the third is tilapia and shrimp fajitas. Oh and their chile relleno is really good too. Now I'm hungry.

How could I forget empanadas? We went to Mexico and a lady made empanadas for the hotel everyday for cocktail time. We tourists went through them like locusts in a wheat field.

But you can't possibly say no to all those wonderful French nun-influenced pastries, can you? Good thing those gals tagged along with the Conquistadores. One good thing to come out of it, anyway.

One of my son's close friends in high school was second generation American of Mexican heritage. Sometimes his mom would make menudo for them and he just loved it.

I would happily eat Mexican all the time. Just made chile verde last night. Just called the lady who delivers tamales at Christmas to make sure she was still delivering. She is!

I like pretty much all Mexican dishes I try. My favorite thing I can commonly get around me is probably tacos de carne enchilada (spicy pork tacos).
