I watch his videos, too. No, I haven't gone out of my way to make any colonial recipes.
I did sort of go old school once in the early '80s when I was camping with the boyfriend. We'd eaten all of the food that we'd carried in. He fished and caught our breakfast. The poor fishies were out of the water and in the pan in about 60 seconds.
Haven't used his recipes, but have done that style of cooking. I've done a fair bit of dutch oven cooking over coals, not just camping but in our back yard and for office potlucks. A lot of people are really stunned that you can cook that way. Growing up we cooked part of Christmas Dinner in the fire place (not because we had to, but because it tastes really good) and I carry that tradition forward today with the dutch oven. One thing I've changed though is mama used a lot of salt port and fatback in her cooking. Now days we leave that out for health reasons. But it did add a lot of flavor.

My friend Ken, God rest his soul, used to know his way around a dutch oven. I've cooked over wood fires and charcoal.
If I don't have to stand at the stove, it's fun for me.

I lead workshops cooking on an open fire. We make breakfast, lunch, dinner and dessert in three hours from start to finish (minus building the fire; that's not part of the workshop). Breakfast is usually a fritata cooked in a Dutch oven. Lunch is done in a modern-day foil pack. Dinner is something like a whole chicken, meat loaf or pork roast in a Dutch oven with potatoes and root vegetables. Dessert is a cake baked in a Dutch oven or Hobo pies in cast iron. It's more time consuming than standing in the kitchen with heat the push of a button but it's worth it.
