last night was sockeye salmon and roasted Greek-spiced eggplant. And a glass of Bota Box chardonnay, which was surprisingly nice. Not oaky, a little buttery. Quite inoffensive and in a box.

Tonight will be herb & mustard roasted chicken thighs and zucchini ratatouille. And maybe another glass of my box wine.

Tonight we are having left over roast sliced very thin and hopefully it will be rare even after I heat it. Also a couple of veggies, I have a whole fridge full of fresh veggies and I don't want them to spoil..With the veggies and meat I think I am doing cottage cheese and fruit salad.

Oh, dear, I forgot that I have a dozen organic hothouse tomatoes to use. They are in a wire basket behind the counter & I didn't see them 'til this am. I don't like tomatoes (or most vegs, for that matter), but I bought a bucket from Costco to make my once/yr spaghetti sauce a few days ago & didn't notice the leftovers 'til today... just couldn't fit this last batch into the pot.

So, I guess it's gonna be fresh tomato-basil 'salad' & marinated artichokes with olive oil-balsamic-sea salt dressing for a few days every time I'm hungry... adding in a can of sardines if I'm super hungry. I'm not gonna like it, but I hate waste. Can't eat them cooked more than once, cuz for some reason, my stomach doesn't allow me to keep down most cooked vegs... they've got to be eaten raw in the rare times I eat vegs. Sauce is a once/yr endeavor, I've had enough of it for this year & don't have the energy to peel & slow cook another batch of sauce to remain in the deep caverns of the freezer 'til next Dec... I'm moving again in Oct, so they'll just be tossed anyway... waste of time.

I hate eating, cuz so much of it makes me physically ill. Hate it. If I could safely live on ribeye, potatoes, espresso, ale & water, that'd be fine, but every time I revert to that, after a couple of wks, I'm so weak I can't move. Did I mention how much I hate eating?!

Tomatoes, you utterly stink.
