Last night's sheet pan chicken fajita recipe is a keeper! It was easy, fast and tasted great!

Tonight is ski night. The rest of the family is having a quick dinner of chicken patty sandwiches with apples. I am not a fan of that so I am having a Lean Cuisine. I will not lie I really like the fish ones!

Tonight creamy potato,leak,carrot,cilantro and green chili soup served with garlic buttered naan.To drink lassi.For dessert 1/2 a pink grapefruit.

olive oil
butter/ghee
garlic cloves
green chilies
leeks
carrots
potatoes
vegetable broth
water
fresh coriander
salt/black pepper
dollop of plain yogurt or sour creme optional

I am making linguini with white clam sauce. Using canned because my seafood store did not have the chopped fresh clams.
2 months ago when I made it I was able to get the fresh chopped clams from him but they were frozen. Still good though.Plus I did not feel like shucking fresh clams.
