Last night went to a Texas style BBQ joint. Brisket, sausage and sides were great, but the burnt ends were not quite there. Got into a "Q" conversation with one of the owners and was treated to a tour of their pits.

Heading out today to pick up our Sam's order and stop by Fresh Market. They have steak on sale. I will pick up one and grill it tonight. If I decide not to do that, it is ribs in the pressure cooker. I have so many veggies in the fridge I can pick any one I want so it will be "close the eyes and pick one"

Since everyone is taking about it, I guess steak will be for dinner here. Besides, hubby tolerated the meatless gnocchi last night. I have some lovely ribeyes in the freezer, spuds and salad.

I am making a pulled pork in the slow cooker today. I will serve on Martin's potato rolls (love those) with red onion slices. A small salad to round the meal out.

Rice with green peas & corn.
Salad: plum tomato, cucumber, assorted green salad leaves, mini onion pickles, bell peppers, olives.
Mini puff pastries cherry & apple, candied bits of ginger.

Tonight chicken breast with tomatoes and mushrooms served with fresh baked baguette,(< a bit of olive oil,grated fresh garlic and a bit of Parmesan cheese on the warm baguette slices).To drink a glass or two of local Ontario wine.

olive oil
sauté sea salted/black pepper chicken breast (boneless and skinless) from both sides and remove to a plate
sauté thinly sliced Vidalia onion,carrot,celery,mushrooms,minced garlic cloves,basil, thyme,oregano
add white wine and balsamic vinegar,cannellini beans,tomatoes,rosemary
Put chicken breast on top of all the vegetable,cover the pan and simmer until chicken is tender.


For dessert my creamed cottage cheese cake...

2 × 500 gram cottage cheese drained overnight and blended the next day
6 eggs
6 tbsp semolina
300 gram sugar
knife tip of baking powder
1 lemon (grated rind and juice)
250 gram butter
Blend everything together until smooth ( adding raisins is optional) and transfer into a pan and bake at 350 F for 70 to 90 minutes pending on your oven heat.Let cool, refrigerate.Served tonight with warm raspberry sauce and black coffee or Darjeeling tea.

I was starving, maybe cuz I only had 1 meal today... ate a whole Cornish hen & 1/2 plate of organic peas & corn. Lots of water.
