Tonight's dinner was like a Chopped episode.

Teriyaki Marinated Tofu (leftover from a dinner we catered)

Cheesy Rice Bake with Panko topping

(It was supposed to be macaroni and cheese. However, I had a cheese and Rotel dip leftover from Tuesday's pot luck. I took that sauce, which had broken, added additional milk and a half-cup of gorgonzola cheese and tossed in some stems of Yu Choy that I had steamed)

Baby Kale Salad

Sauteed Yu

Yu Choy leaves.


Hopefully, next week, meals move outside as we usually eat outside in March.

beans and brown rice slatthered with hormels chili beans and cheese. Also tina's bean and cheese burrito. Not the healthiest but when I drink lots, this works. And I am drinking lots. cheers.

Finished up a few leftovers - slice of thin pepperoni pizza and a small plate of the spaghetti and huge meatballs that Mr C made, and a small glass of Yellowtail Sangria. I was going for the Real Sangria but the other one was on sale. Not bad.

Dessert: one Butterfinger cup.

Carnitas meat shredded and made into sandwiches on kaiser rolls with thin sliced radish, onion, and shredded lettuce plus green jalapeno hot sauce.

Company is rolling in for a week this afternoon, not sure what time, so I’m making a pot of chili. I intend to make a blueberry pie too.

It's a perfect day for smoking those ribs. Oh, it might be a little wet but still a good day. Add to the ribs a nice sweet potato with brandy and butter, a fruit salad and some nice green beans and dinner should be complete.
