Some pan seared chicken breasts, topped with sun dried tomatoes, marinated artichoke hearts, mushrooms and pepperoncinis, on a bed of spinach/arugula, and sauteed chinese pea pods.

You're so sweet! Thanks for the check-in! (I'd like to have your dinner with you.)

I'm doing fine! The root canal went well yesterday morning. I even handled the needles okay, big baby that I am. There was some pressure when they were filling the canals, but that's it -- just pressure. I still haven't taken a Tylenol or an Advil -- no pain. My gums are a bit sensitive on that side, but I'm still eating like a champ. I picked up McDonald's (burger and fries) for dinner yesterday and had NO problem scarfing that down.

Thinking about what I want for dinner. I'm craving veggies, but unless I want to eat mushy veggies, probably not going to happen today.

Tonight I am repurposing the leftovers from the roast beef dinner on Sunday. I diced up the beef and put it the bottom of a casserole dish. I sauteed up an onion and layered that on next. Threw on some frozen peas and then spread a layer of leftover mushroom gravy. I topped it off with the leftover mashed potatoes sprinkled with smoked paprika. Voila cheater shepherd's pie!
