Just returned from a few days away and having others prepare my meals. It's always a rough transition. Tonight I used stuff I previously made and froze for nights like this. Greek meatballs with a Greek style tomato sauce. I tossed in a few red pepper strips and served it all over spaghetti squash.

I have to say the spaghetti squash froze well. I drained it really well before freezing it though. Oddly though the last squash I bought was really sweet--almost too sweet.

Not entirely sure yet, but it will involve pork loin chops and broccoli. I'm thinking a jerk seasoning....

I have been slacking on cooking lately. Today I fix that! I will be smoking up some ribs, roasting golden beets and fixing up some cornbread dressing!

For dinner last night, we had sammies, homemade honey wheat bread with smoked turkey, brie and sauteed apples, then pressed and toasted. Truffle salted fries on the side.
