I cobbled together madras lentils added some red beans, topped with fresh turmeric, cilantro, green onions, shredded cabbage, jalapeno and red bell with lime juice. I cheated as the lentils are from Tasty Bites, but the ingredient list is all whole foods. A side of ruby papaya.
Dessert will be low fat/sugar yogurt with blueberries, lime zest and mint.
DH will go for left over corned beef and cabbage/veggies, and the papaya

Well I wouldn't want to try and use our outdoor grill right now. It is still raining, raining, raining. At least I don't have to water the garden and it doing very well.
Tonight we are having Salmon in the air fryer: fresh green beans and couscous. Spoiled brat will go to lunch with his old farts church group so will have a better lunch than he gets at home: no need for me to out do myself tonight
Tonight I will take the leftovers from the prime rib roast and chop them up and place in a casserole dish. Then a layer of whatever vegetable I have in the freezer, I think carrots. A layer of leftover gravy topped with a layer of leftover mashed potatoes. Bake at 350° for 45 minutes and viola! Dinner is ready.
Tonight we are having chicken lasagna roll-ups, broccoli casserole, garlic bread sticks and the rest of the pina colada cake for dessert.
