Mother's Day dinner turned into lunch on Sat. to accommodate everyone's schedule. I'm not changing the menu.

Thick grilled brined pork chops with lemon, roasted asparagus, and mashed potatoes. This is for my MIL. She will probably complain about the asparagus.....

MY Mother's day will involve something with lots of veggies and Game of Thrones.

For tonight:: making pizza with pepperoni, olives, bell peppers, sausage & mushrooms. Salad on the side. Cold Budweiser Light beer to drink.

Well we just came home from a Sat shopping day and I have lots of food to choose from. All of it is saying "choose me, choose me" I know we are having a green salad and we are not having any carbs, cause our breakfast out was filled with carbs I will probably just do some pork chops and a veggie

I am leaving tomorrow for the UK with my students and travel partner, so I have been trying to plan meals for this week that would finish off the veggies in my fridge. I hate wasting food!

I think I will just make a big batch of scrambled egg whites with the remaining veggies (tomato, onion, mushrooms) and some bacon bits and cheese and the 1 remaining slice of ham I have, then have some of that for dinner and freeze the rest.

Probably no photo as I am crazed with finishing grading and trying to pack ... I'm sure tonight I will dream that I just arrived at Logan Airport (2-3 hours from my house, depending on traffic) AND I FORGOT MY PASSPORT and I will wake up in a panic! Always happens right before I fly out of the country ... and yes, my passport is already packed in the front zippered compartment of my laptop bag!

Anyway, happy weekend to you all! (Oh, and happy Mother's Day to the moms out there!) I will take some photos of my meals in the UK, which will likely be a bit more creative than the meals I've been having at home!

I finally got my husband his turkey tails! A butcher shop about 20 minutes from us was able to order them. Anyway I grilling them outside for him. I am also making portabella mushroom caps stuffed with spinach, basil, garlic, bread crumbs and feta cheese, and a broccoli and cheese casserole.

The scale has been creeping up and it's time to get that sucker back down where it needs to be.

Seafood again tonight, sockeye salmon, steamed purple asparagus, and fresh mixed berries for dessert.
