Cincinnati chili, Mollie Katzen's tiny quinoa-speckled corn cakes, and a salad with arugula, snap peas, and tomatoes. Freshly baked oatmeal cookies for dessert.

Roasted a leg of lamb today. I rubbed it down with ras el hanout and diced garlic. I nestled it in a bed of carrots, celery, tomatoes, onions and potatoes. Sprinkled it all with parsley. I made a red sauce out of the drippings. I impressed myself with this meal!

Here is my leg right before going in.

And here is the beauty after 3ish hours.

Zucchini Shrimp Scampi, healthy, easy to make and very tasty! You do not need s vegetable sprializer, you can cut the zucchini with a vegetable peeler. Don’t pass up this simple fish, it’s really good❗️

Will be enjoying leftovers soon: BBQ chicken, cole slaw and some ravioli. Will drink Red Stripe beer.

In a pub funnily enough.
