Just found out we're getting unexpected company tomorrow, so tonight's dinner will be simple mushroom & red bell pepper quesadillas with a cabbage salad.

We are repeating Fridays dinner cause even though it was Asian we didn't have fried rice. I thought we had left over rice in the fridge. We didn't. So tonight we are having pork fried rice, snow peas, and egg rolls. I don't know if I will add one more thing. If I had some beef out I would do beef and broccoli

Time to pull out my trusty old ravioli maker again. Tonight we are having smoked salmon ravioli (salmon, ricotta, parmesan, parsley, garlic); tomato bruschetta, a bottle of Chenin Blanc; and lemon sorbet with shortbread cookies for dessert.

Looks like a "restaurant menu" … the smoked salmon ravioli sounds delicious!

Thank you, Lynn. It is a recipe I found on Pinterest and I haven't made ravioli in a while. It is one of my husband's favorites.

I made a yellow squash casserole recipe. The blanched squash and onion is mixed with a sauce of egg, sour cream, mayonnaise, milk and cheese. Topped with crushed Ritz crackers and butter.
Baked pork chops and applesauce.

Their pizzas are GIGANTIC so I cut it into 4 pieces, then added mushrooms to one of the quarters and stuck it into the convection microwave at 450 (the highest setting) for about 7 minutes (then cut it in half after it came out) ...

Now THAT ^^^ is my perfect level of "doneness." Turned out delicious and VERY filling.

Oh, I also bought a Market Basket cake ... I almost never bake or buy cakes because I live by myself most of the time and that's the LAST thing I need! But I was sad and in pain and feeling sorry for myself -- and the cake was so pretty I couldn't resist ...

(OK, yeah, I should have taken a picture BEFORE I cut the slice! ) That's a 6- or 7-inch cake. I had one piece last night, may have 1 today, then I'll likely cut some individual slices and freeze them as I don't want to scarf it all down in the next few days!

I'm feeling better today so hopefully no "need" for comfort food.
Find what gives you joy. The pizza and the cake works for me!
