Last night was pork tacos, green rice and refried black beans. Pork was roasted in a mixture of orange juice, achiote paste, garlic, cilantro and a serrano, then shredded. Used up the homemade corn tortillas.

Tonight we are having crab quesadillas with a cucumber-citrus salsa, corn/black bean/avocado salad, and frozen lemon-berry margaritas.

Will be coming back from snorkeling, so will probably stop off for wood fired pizza and rum tasting on way home.

Tonight I had a ham and swiss sub, with potato salad. I was really in the mood for a ham sub. I thought of stopping and buying a sub after work, but realized that I make a better sandwich then any sub place around me. Only because I pack it with meat. Probably two or three times as much meat as any sub place. I like my sandwiches thick. I also buy the most expensive ham. I like sahlens, ham off the bone. Yum, yum.
