We went out to an early dinner at a new restaurant in the neighborhood. https://m.facebook.com/pepestaqueriaa/
So we started with chips, salsa and queso blanco.

The husband had chicken fajitas.

I had fish tacos and a Jarritos mango soda.

The 12 year old had a Mexican steak burrito. The six year had a chicken quesadilla.
They have only been open a week and have some kinks to work but over all we really liked it!

You could not handle the Texas summer. Of course, I can't handle it either. Air conditioning is how the west was won.

We are on our own for dinner tonight. I am making an old college favorite sandwich -- a wheat bun with lots of mayo, dijon mustard, swiss cheese, crunchy lettuce and potato chips and pickles on the side.

I think DH is going virtuous - shredded wheat.

Just a giant green salad. I topped it with shredded carrots, cherry tomatoes from our garden, elote salad, a smattering of croutons, Greek yogurt ranch and cracked pepper.

I have two huge pots of summer tomato sauce simmering on the stove. All stuff from the garden. When it's adequately reduced, I will either put it in the Blendtec or use an immersion blender to make it smooth. I made one pot spicy. I add a dash of cream to serve. They will go in the freezer for another day. I do add red wine to it (not from my garden, obvs) but I only had a choice of really good wines, and not something I would typically cook with. Oh well. I am also enjoying a great glass of vino with my salad since it's open now.

Leftover pizza. Drank Sierra Nevada Torpedo Extra IPA. Blueberries over a scoop of vanilla ice cream for dessert.

It is our happy hour group meeting day so dinner has to be quick and simple. I was planning on Taco salad, but tummy is still fighting a little with the antibiotic I am taking so more likely I will fix the salad for spoiled brat and I will just have a sandwich or maybe a tortilla with a little meat inside. I don't want to push too many salad greens down my throat.

BTW last night I did do the pork chops and the rice together in my Insta pot (pressure cooker) it came out perfect and no mess to clean up.
