I spent all afternoon with friends at the University of Arizona watching women's softball. It was a very cold experience. Dinner was at El Pollo Loco.

Tonight's dinner:

Tortilla Soup
Taco salad.

I must admit that the tortilla soup was better than about 90% of the tortilla soups that I have had in independent Mexican restaurants in Southern Arizona ... and it is made in store.

More or less the Ina Garten meatloaf recipe. Panko instead of bread crumbs. Half & half instead of chicken stock. Some garlic tossed into the 3 cups of softened onions. Way more thyme. Tomato paste, ketchup, whole seed mustard, and maple syrup glaze. The onion makes it really moist.

I had a bunch of leftover meatballs with marinara sauce here but no pasta or any type of bread. I didn't feel like going out. So, I decided to experiment. I crushed up the meatballs in the marinara sauce and then I added some water, some taco seasoning, a little bit of tabasco sauce....and turned it into a huge bowl of some pretty damn good chili that I topped with shredded Mexican cheese.

I’m going to make pizza tonight with hot Italian sausage, and the usual veggies. I’m trying a slightly different dough recipe....basically the no knead bread dough recipe.

Roasting some skin on chicken breasts, butternut squash, red bells, all in oven & then broccoli with cheese sauce.

Magic, in cold weather, a hot plate of Italian food is so wonderful... too bad I'm allergic to cheese. So, your dinner sounds wonderful... & I'm jealous as Valhalla.


For me, a large banana-apple smoothie (broke down & bought a blender), or a couple of red grapefruits, or both. I did Costco shopping so have 112 pieces of fruit to eat in a week... might have to become creative in my ways to disband with it all.
