Hi all. I wanted to make a home baked dessert to bring to thanksgiving this year.. I made homemade cannoli recently and was thinking to make them with pumpkin flavor filling.

What would be the best way to add pumpkin flavor to the cream? The filling is essentially just ricotta and sugar. Should I just add pumpkin spice to the ricotta and sugar and mix ? Will that be enough to give it the pumpkin flavor ? Or should I get a pumpkin purée and mix it in with the ricotta ?

There is a difference between pumpkin spice flavor and pumpkin flavor. Which are you wanting?

Then pumpkin puree is what you want. But pumpkin flavor is kind of meh, IMO. I suspect what you're really wanting is pumpkin spice. If you're talking about the same flavor that's in every store product and Starbucks latte this time of year, you're looking for pumpkin spice ... the combination of cinnamon, nutmeg, ginger, cloves, and allspice.

Thanks, do you think cannoli with pumpkin spice mixed into the filling would give it a good taste or not even tell the difference ?

Instead of the plain pumpkin in the can I would use Pumpkin pie filling in the can. You won't need a lot in the ricotta mixture maybe 1/2 cup? don't forget the chocolate chips.

2 tbsp. cinnamon-sugar
2 c. ricotta
1 c. pumpkin puree
1 c. powdered sugar
1/2 tsp. pumpkin spice
1/2 tsp. vanilla
Pinch salt
1 c. mini chocolate chips

I noticed there is now a pumpkin spice flavor extract (like vanilla extract). That would mix in well.
