Perhaps the crackers weren’t crushed fine enough, or if you had chilled the mixture before forming into patties, they might have held together. The crumbs need time to absorb the moisture.

Can not tell you but am guessing the consistancy wasn't just right. It is hard to get it perfect. I use a recipe from Food Network that seems to work well. I use Mellisa's recipe but have it pretty well posted in my brain by now.

Ritz crackers have a fairly high fat content. That might have contributed to the problem. I have used cornbread dressing mix (dry) as a binder in salmon patties.

I form my patties & then refrigerate. At any rate, I think they need a little time to bind before cooking. They are rather delicate. Adding egg helps a great deal.

All you guys are eating salmon patties? I haven't had one in years. Mom used to serve them at home with the old stand-by creamed peas and they were budget food then.

The last time I priced canned salmon I just about fell over. I bought two cans of the less expensive and, of course, was disappointed. Should have known better. It smelled like cat food.

You are right: refrigerating will help a lot.

I use salmon I've fished for, so I can't really comment on the cost. My kids both love salmon, and patties are a nice way to stretch it.

The best salmon patties around are at Costco.

You can cook them right from frozen. Eat them alone or on a bun with a mayo/sirachi mixture, lettuce, avocado, and so forth.

I made salmon patties for years. Never did make one as good as Costco's.

You need some sort of binder to make fish-burgers form into something other than a mess.

Thanks for all the help. I had never made them so wasn't sure. If I do it again I'll take the advic to heart.

I usually just poach salmon filets but thought I'd try something new after seeing it on Facebook.
