I'm cooking some frozen chicken wings in the oven and as usual it says to preheat it. I'm not sure why chicken wings or most things need a preheated oven. Why isn't it correct to turn on the oven, set it to the right temp and just put the item in?
I realize preheating is important when baking breads, cakes and things like that, but why do directions say to preheat for other foods. What am I missing?

you cant just put the meat in...you've got to warm it up first.... I always pre-heat

cuts the cooking time down ….

With a pre-heated oven, the meat will get hotter faster, minimizing the time when it is warm and susceptible for bacterial growth.

Their instructions are a certain number of minutes at a given heat. When you put things in right away, how long do you allow for the oven to heat up? Obviously, the instructions can't give you variables like that. They can only give you instructions for when the oven is at the proper heat.

I'm talking here about something that just has to be heated up, not a cake or something that requires even temperature throughout. For that you really have to be more precise and not be heating up the oven at the same time as you are putting things in.

My oven takes forever to heat up. So I'd have to add 5 or 6 minutes to the cook time, maybe more, but then what about all the time it was sitting in the oven gradually getting warm? That changes things, yes? Your oven may heat up in 2 minutes flat. So the instructions on the box can't allow for those differences.

As I said, heating up chicken wings or something like that is not rocket science, so you can probably do just as you like. But just don't take the times given on the box as hard and fast.

Sorry, but food in the prep stage is not anymore susceptible to bacteria growth than any other time.

You can put in things like casseroles, etc. if it's not heated up yet but for baking, definitely pre-heat.

It's fine to put in something like frozen chicken wings before it pre-heats, it will take a little longer to cook but it isn't really an issue. Baked goods or something that needs to be at a high heat like a fresh pizza do best with a pre-heat.

If your oven takes so long to heat up that meat is growing bacteria while it waits, you need a new oven.

It helps prevent drying the food by shortening the oven time. Using a lower cooking temperature, even just initially, can change the texture and taste of a casserole as well as drier foods. This may be desirable; we learn from experimentation.
