The recipes look simple enough.

It's certainly a Kentucky thing. Why, even Queen Elizabeth II took beer cheese home with her after being introduced to it during one of her private visits to the Bluegrass to visit her friends and (thoroughbred) horses!

I think but am not 100% sure that the beer cheese which struck the queen's fancy was from Hall's on the River, a popular restaurant overlooking Howard's Creek just above the mouth of the creek into the Kentucky River, about half an hour's drive from Lexington on Athens-Boonesboro Pike. Hall's Beer Cheese also can be purchased at Hall's in addition to a number of grocery stores in central Kentucky. It's smooth in texture, sharp in taste, and the beer and cheese flavors are both easily detected. It's a great dip for carrot and celery sticks, or a spread for bland-flavored crackers.

Good stuff.

No, the sign said "beer" not "bar," and there was no hint of anything spicy or hot in it. It had the tang of a sharp cheese, though.

At any rate, I'll probably never see it again.
