I research them first to make sure they're edible, of course. So far I've tried bittercress (aka shotweed) and yellow rocket. The bittercress I ate raw; the yellow rocket I sauteed with olive oil and garlic powder. I just cooked a little so we could try it and make sure it agrees with us. (So far we're both still alive.) I liked it as well as kale, but DH thought it was a little bitter. (I'm sure it's better when it's younger, but I didn't think of eating it until yesterday.)
I've seen dandelion in stores ($$), but when I'm ready to try it I'll pick it fresh from my own yard.
I've got ferns coming up. Every year I think I'm going to cut a few and have the fiddleheads in butter but haven't gotten around to it yet. It's on the bucket list.
I tried dandelions once many years ago but didn't like them. Should really give them another try as I think I picked them too large.
We do eat ramps, various flowers and our right-around the corner annual treat - morel mushrooms. If it ever warms up before the short season is over.
Purslane, lambs quarters, chickweed and chamomile also come up around the yard.
When I can find them I've also eaten wild plums, raspberries and chokecherries made into jam. These wild plants of the prairie are getting harder to find every year.

have eaten watercress a lot and yes, on rare occasions have had dandelions in salads. As for making a habit of eating weeds, we have enough selections without going out of our way to eat them.
