How to pan fry eggs without having them stick? (pancakes, reheat, yolk)

Use a cast iron pan, use some oil or grease, and - this is important - keep your cotton-pickin' spatula AWAY from the eggs for a while and let them form a skin. All proteins will do this and that skin won't stick; but if you keep poking and prodding at it - "are they sticking? Are they sticking now? How about now?" the skin won't form and they'll stick.
use cast iron, it's easier. use a light coating of oil/spray oil/lard/butter
cooking with cast iron is like cooking using a cheat code. makes it way easier. high heat capacity and radiates more heat to cook into the food better with less temperature drop. can sear foods on stove top, can be used in ovens.
eggs are a bit weird to cook in general. non sticks sucks for eggs (and many other things), at least for me. if you cook at a lower temperature to avoid burning the eggs, it can end up rubbery or with the bottom cooked, but the top still raw. if you increase the temperatures because you want a good crispy skin on the bottom, it'll burn the eggs. maybe the technology or materials have gotten better over time, idk.
HOT oil or butter. Has to be hot. Not so hot that it will burn the egg, but hot enough that the egg will kind of “float” on the grease.
Also, I prefer to use butter vs oil. Works a lot better.
You could try a ceramic coated pan but follow directions closely.
I find frying eggs in cast iron hard. But some people use cast iron successfully. You should have a good seasoning on the cast iron though.
I use a T fal non stick. When the coating goes, as it will, I do not plan to replace, because of the environmental pollution manufacturing teflon type coating has caused. But using non stick will not cause problems if you do not heat the pan higher than medium.
Cast iron pan & butter or bacon grease. Don't drop in the egg until the grease has started to bubble a little.
