Actually it is Macintosh, from a local orchard if possible. Yellow Transparent are just good for sauce.

Right now I'm eating Paula Red. I tried Zestar apples, but found them mealy and they didn't last long. I use Cortland, Ida Red, Northern Spy, and Empire for coming and canning. Late season favorite apples are Staymsn/Winesap and Macoun.

Got my second pan of Knobbly Apple cake cooking now. Nice change from apple crisp, more apples than cake.
