I cook a lot of Asian dishes, and I'm adding some Japanese recipes to my arsenal. Many include a few tablespoons of saki. I've tried various substitutions, but I feel there is a difference.

I purchased a small bottle. Since I'm only using a few tablespoons, how do I store the remains and how long will it last?

Refrigerated it should last for months.

It isn't uncommon in Japanese restaurants for regulars to buy a large bottle of good sake that the owners will keep for them to be served again next time they come back.

The good sake is chilled, cheap sake is warmed.
