They’re not enchiladas if they’re not in the sauce! I mean.. what a great verb.. enchilar... to enrobe or cover in chiles. We don’t have a word like that in English!
I wouldn't consider freezing them without the sauce. They will be so much better if frozen completely saturated with the sauce -- less dry-out and preserves the texture.
similarly to freezing spinach, mushrooms, peppers, onions, etc... all should be frozen while totally immersed in butter. It seems to preserve the real flavors if the actual item is covered in sauce or butter.
