To make chicken "tender" you can process it / chop it for chicken salad or sandwich spread (w/ additions); make an omelet with it; add it as filling in deviled eggs; use it in egg rolls;
Or blend it with some chicken stock for a "meat smoothie" / soup
I think that is a good idea, but I would boil it for awhile and then toss the meat and save the stock for broth. I rarely buy stock or broth, I always have fresh in the freezer.
This. I would boil it for hours, along with some waste skin and bones, and make a great broth with it.
If this chicken is truly tough, and there's A LOT of it, I'd send it to the San Diego Safari Park. They feed the big cats frozen chickens. Having the chicken frozen "slows down" the crunch, crunch, crunch of chicken bones...
I cooked breasts two nights ago. My adult son doesn't normally enjoy chicken breasts but he loved mine.
I flattened the pieces with a mallet, dredged them in flour and seasonings and cooked them in a pan with oil and butter.
They turned out great... moist and very tasty. (that's how I do fish fillets too if I don't want to make a batter)
Don't cook breasts slowly (medium heat is best)
