Ok so Im making the pulled pork and think Im actually being successful at it. However Sonnys has the best corn nuggets and I would love to make them. Anyone ever done it? TIA

corn nuggets are simply whole corn in a bisquik type batter. dump lumpy wet spoonfuls into hot oil until golden brown. drain and have lots of syrup ready. =)

I was thinking maybe it was creamed corn because they are really moist inside. Am I off on that?

I think you can use either one depending on how you like your fritters. Mom mostly used whole corn. They were firm and stood up nicely to syrup and ham for breakfast. =)
I have also had them moist and soft, but they didn't seem like they would take syrup to well. I think it is personal.

Here's a great recipe I make sometimes:

Corn fritters

1 egg
1/2 cup milk
1 can (12 oz. can whole kernel corn, drained-or I use Trader Joe's frozen corn)
1 T vegetable oil
1 cup flour
1 T. sugar (can add more)
1/2 t. salt
1 t. baking powder
oil for frying/sauteeing

In bowl, combine egg and milk. Stir in corn and 1 T. vegetable oil. Combine flour, sugar, salt and baking powder; add to egg mixture. Stir just to evenly distribute ingredients. Drop from tablespoon, a few at a time, into vegetable oil heated to 375. (I just take a guess on the temp, though) Fry until golden and cooked through, 4-5 minutes. Drain on paper towelling. If desired, fritters may be shallow fried.
