I just buy the cornmeal in a bad and keep it in the fridge. Lasts a long time. And Jiffy is waaaay too sickeningly sweet--and that's coming from YankeeLand.

I like yankee sweet cornbread. I don’t have a problem with Jiffy per se, but it’s so easy to make from scratch.

Yup very easy to make cornbread from scratch and I have. But since I’ve been low carb for years didn’t want to buy the cornflour. Always loved Jiffy mix. Just so surprised at the quantity. I like what a previous poster said, “a corn pancake”!

Well I went to the Jiffy Mix website, and went to the "Contact Us" section and told them that we customers had noticed the change in the volume of cornbread per box and that, in my opinion, they had screwed up. The box size was perfect for my family and now it made 4 decent muffins or 6 pathetic ones, when it used to make 6-8 decent muffins. I'll be interested to see if they reply.

No, Ma'am! She won't touch the Jiffy Mix and doesn't even want it in the house. lol
I made the corn cakes for my lunch before I met her.

So I made one today but added melted butter and sprinkled some cheese . It came out much tastier! And I baked it in the air fryer.

Where'd ya'll get the idea that Yankees - North Easterners and New Englanders, the places most of my family is originally from - like "sweet" cornbread? We mostly do not.

New England cornbread is anything but sweet. It's very popular in the NE among "Yankees" with deep roots.

The picture I posted was of a Krusteaz Honey cornbread - they have a plain one too. If I had to choose a mix that is pretty good, I would recommend Krusteaz.

Honey Cornbread is intentionally sweet - to me, almost a desert. Kind of like cranberry walnut bread, or pumpkin bread. Not really bread, but could be eaten with dinner - or after. However, you wouldn't wanna make a sandwich out of it, if you get my drift.

In general, Northerners ("Yankees) do not have the sweet tooth of *most* of the Southerners I know.

Many of us can easily whip up a batch of cornbread in our sleep.

The Krusteaz recommendation is for those like the OP who want a decent mix. To me, Jiffy was never that edible.
