Fresh water bass are good eating. NOT like catfish, those are bottom feeders. Not that catfish is bad but bass is better. I would place it in the same category as Red Snapper for taste and texture. I am speaking of largemouth bass. No experience with small mouth bass.
I love dipping the bass in milk and rolling in corn meal and dropping it in hot oil. Fileting is nice but I never caught on to that. I'm still the type who would cut the head and tail off, gut it and get the scales off and fry them. I do the same with bluegill and catfish. They're all good when you can peel the bones, intact, out of the meat.
In my zip code, bass is black sea bass and striped bass. With sea bass, I tend to gut & scale it and bake it whole with lemon or a fruity white wine like chenin blanc and fresh herbs. Striped bass is a larger fish so I filet it and otherwise use the same prep. It’s delicate so you don’t overpower it with herbs & spices or sauces.
