I had read that you could freeze it and then "nuke" it and would be great... NO WAY. Sadly, it's hard for one person to eat a whole head of cauliflower. I froze some that I had roasted - turned into a bunch of water mush when I tried to microwave - trash can fodder.

I sometimes buy it pre frozen at the dollar tree, maybe you could try that. They have bags of cauli rice in the frozen section. I make rice pudding with it, but you could probably use as a rice sub too. Heck for a buck, why not.

That's when you mash it with cream cheese, butter, and chives. Yum!

Separate the head into florets, spread them on a tray, and freeze them, raw. Then store in a freezer bag. The texture will not be quite like fresh cauliflower but it will be a lot better than if you freeze it cooked.

We're a household of two, and I buy cauliflower often mostly because it keeps longer than many other vegies. If it's nearing the end of it's life, I'll usually make soup, which I have successfully frozen. More often, I share it with the dog - she's a big fan of most veggies.

Hmm - maybe I'll try that. It's difficult for one person to eat a whole head of cauliflower before getting tired of it

Yup.. I freeze mashed cauli frequently. I add nothing but shredded parm, cream cheese, s&p. When I cook the cauli, after I drain the water out, I put it back on the burner for a minute or 2 to get out as much water as I can. It freezes and reheats wonderfully.

If you are buying the cauliflower fresh, you use 1/2 the head this week and the rest on next week. It will last that long,

I agree.

But sometimes it just makes sense to pitch something away and buy fresh, or a different veggie for variety.
