The trade secret is the application of the initial hard coating, not the tumbler/spraying process which is standard throughout the industry. Without the initial coating, the chocolate centers would stick together while tumbling.
I have seen the tumbling process in action at a Warner Lambert Company manufacturing plant. They use it to coat Chiclets gum. The tumblers are like huge clothes dryer drums with sprayers inside. This and the other manufacturing processes are fascinating to watch.
Heh, I used to live near a little candy store that hand made many of their candies. I bet they have one of these hidden in the back somewhere. I always thought it would be fun and creative to work there.
My source tells me that M&Ms are made to look seamless by a large staff of employees who carefully sand off the seams, then apply the logo. The candies are then individually examined under bright lights and magnification by a team of quality control engineers to ensure every candy meets the specs.
