My family and I had Easter brunch at my sister's today. We had a quiche, sliced roasted potatoes, homemade pasta fagioli soup my mom made, roasted asparagus wrapped in filo dough that my brother-in-law made, ham, cream-style corn and two different kinds of pie for dessert--a blueberry cheesecake and a chocolate silk, both brought by my dad. The food was good, but getting together with the family was even better!

Have a good lunch today, as usual for Monday, weekend leftovers. They dry up after Tuesday's lunch and I tend not to manage to make myself lunch again all week
Gonna try to do better at that.

Today I have 2 slices of baguette spread with butter and topped with chopped ham (from the edges of the Easter platter ) and candied sweet potatoes and green beans. Some oatmeal I didn't eat for breakfast will make a nice afternoon snack if needed.

I topped a piece of garlic bread with sliced ham, salami, and slice of pepperjack cheese, and then melted it under the broiler.

Guess what? One day after I renewed my determination to pack more "school" lunches Wednesday-Friday, I failed to make myself lunch on a Tuesday!

So I had a grilled chicken breast sandwich and a small J-Box salad with low-cal balsamic. Boy low-cal dressing stinks!!
