I had chicken breast with old apples and banana peppers and maple syrup. The chicken breast was marinated with sage, salt and garlic overnight. It actually turned out great. Maybe I was just hungry. . .

2 chicken breasts
1 Old, somewhat dehydrated apple (I am so proud I used it!) cubed
3 Free banana peppers from a generous gardener sliced
1/2 of a yellow onion sliced
Oil
About 30 Peanuts
Salt to taste
Maple Syrup
Water

I seared the chicken breasts on both sides in a cast iron skillet. I browned the onions with the banana peppers and the apples on the other side of the skillet. This was on high heat and I stirred the vegetables constantly. When the onions were a bit brown, I got the bright idea to throw in some peanuts.

I actually seared the chicken breast while I was doing this, not before. So once the chicken breast was seared on both sides, I turned the oven up to about 400 degrees. Then I poured about 1/2 cup of maple syrup into the pan. I put in a little water and I let it boil. I spooned some syrup over the chicken and put the pan into the oven. Then I washed my face.

I was pretty hungry so I came back after about 10 minutes and put the chicken under the broiler after spooning some of the maple syrup sauce over the breasts. I left it there for about 5 minutes. The chicken was brown and toasty on top. The vegetables and fruit were tender and delicious. If I had time, I would have made some rice, but I just ate it.

Savory delicious chicken with mouthfuls of the sweetened sauce and tender fruit and onion flavor was really wonderful.

A fellow CD pal treated the wife and I to a pulled pork roast lunch with baked potatoes, apple sauce, and sweet peas. Delaying supper for a good reason.

We we had a reservation sort of. We had spent the day at a photo show and I helped with some computer and C-D tutoring. That may had a tad to do with it. Na, she would have fed us anyway. That's how nice a lady she is. The result of the lunch for tutoring can be seen on the sunset thread. Let ya figure out which one it is????

I had to fend for myself at home today so it was very simple. Slices of American cheese and a couple of hot dogs.

I faired much better today with a chicken & jalapeño wrap along with an endless glass of lemonade. For dessert here at home I'm finishing off a bag of jalapeño kettle chips.

Went to Grandma's Today... Salad w/ FF Ceaser and Bagel with light cr cheese... AND Soft and Chewey Chocolate Chip COOKIES....
