Grilled cheese, ham, and tomato with a side of sliced tomato and Miracle Whip... a nice glass of cold peach iced tea. Very satisfying on this bleak, rainy day.

Today for lunch I am going to have chicken salad (made from our Sunday roast chicken), red onion, and tomato in a wrap, and a cup of strawberries on the side. Can't wait!!

Yum, Highlands, that sounds really good!!

Today I've got one very small lamb loin chop on baby spinach with a bit of balsamic vinaigrette. Also some more grapes, and an ounce of havarti with a few spiced walnuts.

Leftovers, gotta love them.

Today, I'm making english muffin pizzas...muffin, crisco, tomato paste (6 oz. per 12 muffin halves), dried herbs, and mozzarella. Bake 20 mins at 375. Any attempt to improve them with gourmet ingredients (like olive oil instead of crisco, or your lovingly made tomato sauce) ruins them.
