This is our ABSOLUTE favorite recipe for lamb. I make it several times during the winter. It's so wonderful! Tried, tested and will forever be a staple in our winter diet.

Braised lamb shanks are to die for and much less expensive than lamb chops or leg of lamb. Dredge them in seasoned flour and brown in olive oil, transfer to dutch oven. Saute onions in same pan, add chopped celery and sliced carrots then when the veggies are caramelized, add garlic. In the meantime prepare diced tomatoes (canned are fine) mixed with red wine, some cumin, a little curry powder and some coriander. Combine tomato mixture with caramelized veggies, pour over shanks, cover tightly and simmer for about three hours. Serve over a pile of garlic mashed potatoes and sprinkle with strips of fresh mint leaves. Cheers!

That sounds like something I might like-- a lot.
I guess I will find out when I go to the grocery store but is there much meat on lamb shanks?
Sometimes there isn't much meat on pork/beef ribs and that is disappointing.
Fingers crossed stores near me will have a good selection.

The fore shanks are a good single serving and the hind shanks will serve two (or a VERY hungry one!) Cheers!

We love lamb at home. My fiance will either marinate and grill (which is delicious) or we'll make leg of lamb. He most recently made an authentic Indian dish with lamb and my goodness it was SO great! You can find easier stuff to do, just check websites like Epicurious or other cooking sites... I think the easiest is just to marinage and then grill it. Good stuff!
