ok, I'll bite.
I don't care much for fast food taste, but the key is FAST food. It's just something to satisfy your gut. If I had to sit and wait for 20 min for a qtr pounder, I wouldn't eat there again. It must be fast food, served hot.
Challenges- Perception, innovation, costs, location.
Solutions - If I knew the answer I'd be on a beach somewhere, not in w.KS.

Eating out is great! I don't have to cook or clean up. Someone is waiting on me for a change. What's not to like?
Do you have specific questions you need answered for your dissertation or should we just give our opinions?

Fast foods are normally a chain and you know what to expect. If you don't like a 1/4 pounder in CA you want like it in NY either. Fast is still the key word. Time is money so they say and when time is limited fast food often get the nod. Since the middle of the last century fast foods joints have multiplied like rabbits providing more choices for consumers and creating competition that has advanced menu selections across the board. A few years back I was a guest at a 5 star restaurant and the food was sub par to any of the burger joints. At least FF places don't serve rubbery lobster. My 3¢.

I have not eaten at a fast-food joint in years. Between the unbelievable amount of fat, salt and calories in the food, the total lack of flavor, and the rude people behind the counter, it is simply not an experience that I choose to endure.
If I am going to pay someone else to cook and clean up for me, I'll patronize a local restaurant where the dishes are unique and flavorful, the people are friendly, and more of my food dollars actually stay here in the community, instead of enriching the corporate coffers of some mega-chain off in who-knows-where.
Probably not what you wanted to hear for your dissertation, but then judging from the throngs I see at McD's, BK and the rest, I'm very much in the minority, and they're in no danger from my curmudgeonly attitude.
