Got some really good Peaches, very large and very good. Still firm and would like to freeze some; need advice to do this and not loose a singel slice.

I really like this how to site when I have a question like this... hope you get some use out of the information... I have never frozen a peach personally and actually never thought about doing it...but after reading this it isn't such a bad idea...

Alton Brown covered this last night. Crush up several Vitamin C tablets/ascorbic acid and add sugar and sprinkle over the peaches. The sugar releases juice and nothing more was needed, IIRC. He said to get all of the air out of the bag and sucked some out with a straw. Assuming this was not just to be entertaining.
