Default I made tomato sauce. It is very good.

I live in Raleigh, NC and Saturday morning we were still feeling lingering effects of Hannah. Nothing severe, but some flash flooding and rain.

As a result, the Farmer's market was very nearly empty. But there was a regular vendor there, a guy I've bought from before, and he had about 10 boxes of roma tomatoes labelled "ugly but good" for .99/lb.

That was a pretty good price, and I was looking to try my hand at red sauce, so I bought about 5 pounds.

I'd never made it before, wasn't sure how, so I looked up some techniques, and took what I thought were the best elements.

Sliced them, quartered, drizzled with EVO oil, seasoned, roasted for 30 mins. at 425 then through the food mill. The resulting juice/pulp was then simmered for hours, a little sugar, a cup of cabernet, a little pepper, some basil, oregano and a lot of roasted garlic, then hit with the emersion blender.

Holy crikey it was awesome. Made some grass feed beef and pastured pork meatballs, a pot of pasta and had a feast.

The only problem was that I made too little. Enough for 2 more meals, but I really wanted some to freeze.

So Sunday I went back to the market, and my guy is there again. I tell him my success story and say I'm back for more. Hey says "Fill one of those boxes up and you can have it for $8". SOLD!!!

So I spent Sunday making 25 pounds of ugly tomatoes into sauce. Made applesauce too, but that's another thread.

I froze what I won't be eating tomorrow night (eggplant is in season here, so we're having eggplant parmesean) but really want to try my hand at canning.

I could show you how I used to can, but I don't have any more supplies. gave it up a few years back. I used to can tomatoes, make 3 kinds of pickles.

Well, after several uses, the glass in the jars weakens. One year, I lost about half of my efforts. It was heart breaking.
