Default Craving something mexican! Help!

I went back to page 12....guess i could have dug deeper, and maybe found a recipe, and I really don`t have anything in my cookbooks that hits home.
I have a craving for mexican. Thinking something like enchiladas or burritos? Anything good really that anyone wants to share?

Hmmmm....maybe I will dig out my cookbooks and dig a little deeper.

Thumbs up Mexican desserts

Have you ever tried Mexican desserts? In addition to flan (sweet custard topped with syrup), I absolutely LOVE tres leches cake. Here's a recipe I found online:

I posted this in the recipes forum, but am not sure now which thread it was. This is a fairly authentic version of pinto bean soup that you'd find in the Texas-Mexico border regions, very easy and quite tasty.

Charo Beans

1 cup dry Pinto beans, soaked overnight
2 qts. water
1 onion, medium chopped
2 stalks celery, medium chopped
2 carrots, medium chopped
1 large fresh chopped tomato OR 1 (16) oz can tomatoes, drained and roughly chopped
1 (or more) fresh jalapeno peppers, to taste (see note below)
1-2 tsp. salt

1/2 bunch fresh cilantro, medium-chopped

Put soaked beans and water in a large saucepan, bring to a boil, turn down and simmer for 30 minutes. Add carrots, celery and onions and simmer 30 minutes more. Add jalapeno, tomato & salt and simmer for 10 more minutes. Add cilantro, turn off the heat and allow to sit for 5 minutes. Serve with corn tortillas.

Note on jalapenos: you can get at least some idea of how spicy peppers will be by looking at the pith. If the white pith is coated with dark brown oil, it's likely to be a wild pepper. If there's just a little trace of golden or orange oil along the pith, it's probably a milder one. With any pepper, the heat is concentrated in the pith, so if you aren't fond of very spicy things, be sure to remove the pith from the jalapenos before putting them in the pot.

Did you ever have your "something mexican" yet?

I am making shredded beef tacos tonight, I have been trying my hand at homemade tortillas and though I haven't mastered them yet I think they are good enough to try to make my own fried shells. Yum, I can't wait.

Here's a recipe for ground beef enchiladas that looks pretty good (nice pictures too!), if you prefer the more americanized style mexican food.
