I saw a YouTube video on this and thought I’d give it a try.
I have never even eaten a pickle egg before but it looked good.
Recipe was super simple.
Tossed some veggies in there too because I know those are good.
It will take two weeks to find out if it is good.
Wife thinks I’m nuts for spending time on this.
Oh well .

Pickled eggs are fantastic!! German pub/Bierstube stapple.
Leave them in a tall jar with the brine.

You are in for a (good) surprise.

The local joint around here serves them with pretzels and those liitle yellow chiles. All else you need is a beer.

DH loves them so much that daughter gave some to him for Christmas.

We live in an area with strong German heritage and the workingmen's bars always had a gallon or two on the bar for sale. Along with the pickled pig's feet. Yikes!

I used to put peeled hard boiled eggs in the brine from dill pickles. Yum!

Did you use apple cider vinegar or regular vinegar? I tried this with acv and it was too sour for me.

When I first moved south many years ago those jars of pink pickled eggs were at the register of nearly every gas station and convenience store around, sitting right next to bags of boiled peanuts.
I've tried the peanuts (not a fan), but I've never had the nerve to try the eggs as that weird pink color totally does not look appetizing to me.

I used 30% apple, 30% white vinegar and 40 % water.
There are tons of recipes on YouTube so I did what I normally do and that’s just mix and match them to what I think is best for me.
I hope this works out well.
If it does I’d like to do some jars that are strictly veggies.
I’ve tried that before by just using Mazzetta peppers juice but it was kinda weak.
I dig pickled veggies as a pallet cleanser before a meal or as an appie side dish.
