Default I like...

1. Peanut butter and American cheese slices on whole wheat or multi-grain bread
2. Peanut butter and banana of course...
3. Of peanut butter and banana smash...you take the banana and mash it up in a bowl...add a fair amount of peanut butter and smash it into a spreadable paster...if it is too thick/heavy you can blend in a blob of mayonnaise (no, it is not icky...well not to me). Take the spread and apply it to the bread of your choice...of if you are like me you end up eating a good bit of it right out of the bowl with a spoon.
4. Peanut butter and bacon...truly divine
5. Peanut butter and molasses.
6. Peanut butter and a grilled chicken breast on a bun...be sure to mix some soy sauce, a little rice vinegar, some sugar, garlic, cayenne, onion powder, and ginger in with the peanut butter and heat the resulting sauce a bit
7. Peanut butter and crisp, tart apple slices on some good quality bread
8. BROIL an open face peanut butter and jelly/jam/preserves sandwich...put the peanut butter on piece of bread and the jelly on the other...put under a broiler and hit it with some heat until the peanut butter begins to brown a bit. Remove from oven and then combine the two halves to make a closed sandwich, being careful not to let any of the liquids hit you since it is akin to molten lava...you have to let it cool down quite a bit before consuming.
9. Peanut butter and Cap'n Crunch sandwich is fun, too.

I use chunky peanut butter almost exclusively...usually Peter Pan, Jif, or Kroger brand.
