I have to tell you about the best thanksgiving dinner I ever had. Today's.
The turkey (10lb) was roasted in an old Westinghouse electric roaster from the early 50s and came out so moist and juicy. Not a bad bite.
Cornbread dressing with giblets and one extra can of chicken broth than usual. I requested that with the memory of last years being a litttle on the dry side. Wife uses Jiffy mix, so dressing is sweet.
Creamed Potatoes. She is an expert making these.
Green bean casserole. As usual we just didn't make enough. Teenage daughter can eat the 3 qt. pyrex casserole full.
Cranberry Sauce. Very Good if out of a can.
Wife's special holiday salad. Lime Jello, avocado, grapefruit wedges, marachino cherries, pecans. It is delicious. Was her mother's recipe.
Rolls.
Oh and of course the gravy (turkey drippings) and tea (unsweetened).
Pumpkin pie for later in the afternoon.
Sure we could have probably made more food (some of you posters menus sounded delicious), but it was just the 3 of us.
Okay, I got a lot of DM's for the hot crab dip recipe, so here it is:
3 tablespoons of unsalted butter
2 medium shallots, finely chopped
1/4 teaspoon of cayenne pepper
3/4 teaspoon of Old Bay
1 1/2 teaspoon dry mustard
1/4 cup of half and half (I use fat free)
8 ounces of cream cheese cut into small chunks (I use the 1/3 less fat kind)
4 ounces of sharp white cheddar shredded (about 2 cups)
3 tablespoons lemon juice (I just eyeball it or use the juice of one lemon)
2 teaspoons Worcestershire sauce
10 ounces crabmeat, drained and picked through (I use two 6.25 oz. tubs)
Melt the butter in a medium saute pan (or saucepan) over medium heat.
Add the shallots and cook until soft.
Add 1 tablespoon of water and simmer for 30 seconds or so.
Stir in the cayenne, Old Bay, and dry mustard until combined
Pour in half and half and bring to a simmer
Slowly whisk in the cream cheese, a few pieces at a time
When the cream cheese is fully melted and incorporated, whisk in the cheddare cheese a bit at a time.
Stir to combine after all is melted about 2 mins.
Remove from heat and add lemon juice and Worcestershire and combine
Fold in the crab meat.
I serve this with sliced baguettes. You can keep it warm in a Crock Pot or Little Dipper, or put in a casserole dish and heat in the oven.
We had turkey, cornbread dressing, sweet potato casserole, green beans, mashed potatos, corn, rolls, deviled eggs, a cheese ball, a spring mix/strawberry/honey roasted pecan/blue cheese/blush wine vinegarette salad, pecan pie and pumpkin pie. It was good! And we had a ton of people!
