Has anyone picked, cleaned and roasted the pinion nuts? If so can you give me some advise please.

I have eaten Pinion Nuts all my life. I could go out and gather them where I was raised in the mountains where they were plentiful. I have never roasted them---they are so good raw! I am sure if you Google it there should be some good advise on roasting them. I would just never roast them myself.

Thanks, I did google, and found some information. I have eaten raw and roasted, so will just enjoy them.

No, not yet, I was told if you burn the pinions when roasting, you can use it for coffee. But we can get it around here, so I may just try it.

You wash them with water and then you drain the water off after taking a spoon and mixing the nuts up to bring off the brown dust. Then you put a little water in a brown pan or cookie sheet, sprinkle salt and stir up so that the water and salt mixes up and then heat the oven to 350 degrees and every 10 minutes or so, take a spoon and mix the nuts around to absorb the water and tossing them around the dry salted nuts move down to the bottom and the wet nuts move up to the top and when you get down to just damp wet pinions, turn off the stove and let the heat cook out the last bit of the water or dampness to the pinions. Take out of the oven and let cool for about 30 minutes and then they are ready to eat. I like eating them even while they are warm. Do not keep them in long with the heat on or you can burn the nuts. It's a constant checking of the nuts to see how the water is baking out of the pan.

I just warm a skillet (I use enameled cast iron) over the stove, add the nuts, and stir and toss them over low-med heat until they start to turn color and smell nice. Easy peasy.

oh so they are a form of pine nuts?
we (Italians) use pine nuts in cookies, and pasta dishes and other foods. maybe these can be used the same way

So you don't use salt on yours? Some people eat them with salt or without salt but I love them with salt. I hope the person who wanted this information will check back to see her two ways of roasting her nuts.
