Thanks Lacey - yes it was a duplicate - I messed up! posted in wrong forum - doh - then got mods to delete and ... well, all sorted now. Very dozy today

In a mixing bowl, dissolve yeast in warm water. Add sugar; let stand for 5 minutes. Add the milk, 1 tablespoon butter, egg and mix well. Combine flour and salt; add to yeast mixture. Beat until smooth.Cover and let rise in a warm place until doubled, about 45 minutes.
Brush griddle and 3-in. metal rings or open-topped metal cookie cutters with remaining butter. Place rings on griddle; heat over low heat. Pour 3 tablespoons of batter into each ring.
Cook for 7 minutes or until bubbles begin to pop and the top appears dry. Remove rings. Turn crumpets; cook 1-2 minutes longer or until the second side is golden brown. Serve warm or let cool on a wire rack and toast before serving. Yield: 8 crumpets.
I save clean water chestnut and pineapple cans so I can make crumpets whenever my family requests them.

The thing stopping me from making them was a lack of circular cookie cutters or rings - that's a great idea! Now I just have to go shopping and then find a use for 12 cans of pineapple....

I remember (back in Ireland) I used to have them at tea time with butter melted on them man that brings back the memories. Havent had them since I came to the US, and its a coincidence because I was just thinking about them this afternoon and I stumbled across this thread. Good luck on your quest, cause I think I might take it up too and go on "the hunt" for some good crumpets.

Love them toasted hot with a thin slice of cheddar and some spicy mango chutney!
