Post alternatives or replacements for ingredients (cake, butter, recipes, sauce)

I've read many recipes on the back of cake boxes and cookie chip bags. I think the tastiest alternative i've used was apple sauce instead of butter. To me the flavor was pumpkin'ish

I've seen things like that in old cookbooks. Can't think of any off teh top of my head, though.
